My younger son (17) and I are going to Texas the first week in July for a one day exotic ram hunt. I won the hunt in a raffle (good $10.00, 3 ticket investment!!!) and am giving it to my son for his 17th birthday present (May 27th). I have to pay for the travel and lodging, but I am combining it with a business trip I needed to take to San Antonio anyway. The hunt & meat processing are included. I spoke to the ranch guide and he stated it was a pretty much guaranteed hunt and he will process it anyway we want it to be done.
We will be flying into San Antonio and staying from July 6-9, 2005. We will be hunting on the 7th near Kerrville.
I heard the meat is real good- has anyone had the pleasure to harvest an exotic ram and eaten the meat? How was it? How was the meat cut (steak, chops, burger, roast) and prepared?

A friend of mine gave me some meat from a Corsican Ram. I can't recall the exact taste, but it was fine. Like all sheep/goats, they eat better than they smell on the outside! :eek: It's been too long to remember the exact cut. Like any lean wild game, the key is in the cooking... must be slow, and kept moist. Otherwise it is like eating a really tastey shoe....... the crock pot is your friend. Start with recipes for roast beef and go from there. Throw it in the crock pot with some beef stock, potatoes, onions, and whatnot, cover with water, and cook all day. Yum!
Hey... I saw your post on hog hunting. I'd inquire about popping a few hogs while you're there.... it's difficult to imagine that they do not have any hogs in that country, and they are considered something of a nuisance on any serious deer hunting operation.
Since you are there already, might as well make the most of the trip.

I asked the ranch guide about hunting some hogs also while there. He said the ranch we will be on does not have a huntable population. "Not even worth the effort" was the way he put it. I don't know if he is pulling my leg or if there really is not enough hogs in his area to make it worthwhile. I would love to add a hog or two to the freezer, but I guess I will have to look other places. Thanks for the suggestion though. NUPROFESSOR

Ask him about the next door neighbors. Somebody in that area has hogs, I guarantee it! They may have an agressive control program......

Completed our hunt earlier this week. My son harvested a good tight full curl Corsican ram. The guide said it weighted about 160# or so. I know my son was very pleased. Had the meat processed, but have not eaten any yet. I look forward to eating it to see if it is any good. When I have the opportunity to eat some of the meat, I will repost and let you know how it was.
As for the hogs- saw a lot of differant animals, but not one hog. Guide said there are hogs (mostly 50 -120#), but need to focus on them specifically to be successful. Discussed with him a possible follow up hunt for hogs maybe next year (if I can talk the wife into it). Need to work some more overtime to finance the trip though and to get the wife possibly on my side.
