First of all, welcome to the forum!
As far as dies go Dillon, RCBS, and Hornady all make fine equipment (as well as a few others, but I tend not to use them). The bullets are the same for both the 9mm and the 357 SiG except I think you can find some heavier ones designed specifically for the SiG. I like the 125 Gr. Gold Dot and I have a 125 Gr. .355 RN mold for casts.
I personally haven't had any problems with my RCBS dies not resizing properly so I don't know what to tell you there.
With the crimp though, your going to want to have a taper crimp. I'm not even sure if you can get a roll crimp and I'm too lazy to get up and look right now. From everything I've read the 357 SiG headspaces on the mouth, not the shoulder. I'm still not sure if I believe that though because going against all the warnings I've recieved I tried forming 40 S&W and they seem to work fine out of my Sig 239 despite being about .020" too short.
