Game meat appetizer

Every year we all go to the boss's cabin for our christmas party. He usually makes this appetizer for us with either duck breast or venison loin. Not a whole lot to the "recipe" but it is inordinately good.

Take the meat and marinade it over night in Dale's marindade and a few fresh Rosemary leaves. I don't know if Dale's is available nationally, if not, it is mostly just watered down soy sauce, terryaki would be fine, or whatever you favorite other marinade is.

Grill the meat over hot charcoal being SURE to leave the middle at least a little pink. Wrap in foil and let rest a few minutes.

On one side of a platter put a 16 ounce block of cream cheese, on either side of that put pepper jelly and sliced pickled jalapeno peppers.

Take the venison or duck breast and slice it very thin across the grain, our host uses an electric knife and the slices are no more than 1/8" thick. He can do it so that the whole piece of meat stays together and I think this keeps it from drying out.

Put the sliced meat on the platter along with some triscuit crackers and a fancy little spreading spoon. Everyone can fix there own just like they want it. Spread a little cheese on, a dab of jelly, two jalpenos and two slices of meat for me!

Everybody loves it, even those that don't like game. This is a long winded explanation for something that is really very simple but it is truely delicious.
