QUICKLY it is skinned and cooled! As for recipes, any you like for deer will work fine. My personal favorite is chops or backstrap breaded with cornmeal,salt and pepper and cooked in an iron skillet. I don't like onions, but my step-father-in-law likes them cooked in the skillet smothered in onions. By the way, he likes antelope but doesn't care much for deer! ID
